(Credit: Doug Young, Recipe by Marc Anthony Bynum) WHAT YOU'LL NEED: 3 pounds sweet potatoes 1/2 stick (1/4 cup) unsalted butter, sliced and at room temperature 2 tablespoons light brown sugar Kosher salt 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 1 vanilla bean, split lengthwise and scraped, or 1 teaspoon vanilla extract 1 teaspoon real maple syrup (use grade B) HOW TO: 1. Preheat oven to 400 degrees. 2. Prick each potato once with a fork, then bake until tender, about 1 hour. When cool enough to handle, peel, cutting away any eyes or dark spots. 3.
